Hi! Being veg*n is a great starting point for saving money while eating healthy. I suggest you buy lots of seasonal and local fruits and veggies (they tend to be cheaper, and also fresher!) and eat them raw, steam them, stir fry them… with the addition of a few spices of your choice. Also, dried legumes are a great (and cheap) choice, my favorite are lentils (lots of iron!) and chickpeas (you can use these to make hummus or similar spreads). Personally, I love rice, especially short grain brown rice: it’s filling, healthy and cheap! Try to alternate with other grains such as millet (goes great with red lentils and curry!), barley etc…
This is a great, healthy diet and incredibly cheap.
Skip poor quality cheeses, cheap eggs and expensive pre-packaged snacks… make your occasional treat (depending on your taste!) something you can spend a little more on, without compromising on quality and ingredients.
