Answers:

Protein shouldn’t be too much of a concern. The average American eats about twice as much protein in a day as they should (which has its own repercussions).

Basically, if you’re eating a varied diet and getting enough calories, you’ll do fine on the protein front.

But, to answer your question, there are plenty of non-soy sources for protein: nuts and seeds (including nut and seed butters and milks, of course), whole grains, and beans/legumes.

I highly recommend buying (or checking out of the library) BECOMING VEGAN. It has everything you need to know about vegan nutrition and then some.

I suggest trying new vegan recipes to expose your palette to the vast range of foods beyond tofu and other soy “meat” subtitute products.
