I found the original recipe for Cheese fondue on an internet site – “the classic” version and was greatly helped ( before I made it) by other people commenting that you must mix the cheese with extra cornstarch and add it slowly to the wine- stirring slowly and consistently and totally focusing on making the fondue- it requires total focus. It is a very rich dish- the classic cheese version. I bought really good – fresh french bread from a good bakery and that was all I dunked in the cheese fondue. I did the chocolate version a few nights later and that came out very well too. I used chocolate buttons with a high chocolate content from whole foods, cream and sweetened condensed milk over a double boiler. Pound cake is a must as well as bananas and pineapple for the fondue. I even bought special marshmallows but I felt they were too rich -the combo of marshmallow and chocolate. Strawberries are a must with the chocolate fondue. Good luck!
