here’s the plan:

breakfast: huevos rancheros-ish breakfast burrito
lunch: something light (chicken and salsa verde?)
dinner: normal burrito

snacks? maybe mini burritos?

this is going to rule!

Dessert Burritos

YES!!! They’ll be like crepes, but really thick. Filled with nutella and strawberries. Maybe I’ll turn this into a dessert party. Maybe prerequisite for entry will be eating 3 burritos that day.

honey burriots

I can’t believe I’m admitting this publicly, but sometimes at night I’ll warm up a tortilla in a pan and spread a bit of raw creamed honey in it (and raisins if I’m feeling it) then wrap it up like a desert burrito and EAT THE HELL OUT OF IT!

I love to put some butter and cinnamon and sugar on a warm tortilla and burrito it up. I’ve been eating this snack since I was a kid! I’ll put anything on a tortilla though. The other day I put yogurt and jam on one for breakfast.

Oh yeah, my mom would make me those when I nagged her for a snack. She’d coat the inside of the shell with butter first.

sugar burrito...peanut butter?

I’ve been eating that since I was a kid too! and sometimes I like to make them with peanut butter and jelly, or peanut butter and cinnamon but no sugar. yum.

Desperation Dessert Burritos

warm tortilla in pan, till one side is softened and slightly crisp.

remove from pan. flip it over so crisper, warnmed side is up

sprinkle HALF with grated semi-sweet or bittersweet chocolate, chopped almonds, maybe a few dried cherries, maybe a sprinkle of cinnamon.

Fold over into a half-moon shape (untoasted side out).

Return to pan, browning the half-moon on one side, then the other, and letting the chocolate melt and get all squishy.

Sprinkle lightly with powdered sugar and/or cinnamon (optional).

Eat, at once, with tall cold glass of milk.

Lick plate.

Make another.

(I guess these would really be more deperation quesadillas).
