I must, must, must start eating vegetables [And not starches/tomatoes. Real ones.]. I avoid them all the time, and I don’t think about it. But it occured to me today how little I eat them, and how bad the consequences will be in later years if I don’t start eating them.

Vegetables stall mental decline, and I don’t want to be an idiot. I really don’t want demensia or alzheimers. So I have to start eating them.

I figure that if I think about which ones I either like or tolerate, and actually make an effort to eat them every day, then I’ll be able to do it.

So far, I’ve thought of:

Waterchesnuts
Raw Spinach/Salad
Corn [Which is not all that great, and there’s so much corn in everything anyway.]
Raw carrots
Cucumbers
Steamed broccoli

I’m not a big fan of vegetables, as you might tell by the length of the list. And in my experience, fresh things tend to go bad. So I always assume that all bagged vegetables are probably rotted, and then I don’t eat them. I need to stop that, though. MUST HAVE VEGGIES!

We usually have spinach in the fridge, so I suppose I should start eating some in the morning instead of cereal. I’ll start tomorrow. Or maybe I’ll go downstairs tonight and have some. It’s a bit late, but if I start tomorrow I may forget.

vegetables can be interesting

The best way to enjoy vegetables is to start by appreciating them.

Try to buy them from a farmers market where they’re fresh and well displayed. The sugars break down in the carbohydrates if they’re not freshly picked and they taste bland. Also you get to know the people who grow them and it’s a great place to swap recipes.

Salads are a good way to get in the habit of throwing together some vegetables, fruits, meats and cheeses together to start the habit. Spinach works really well in salads (even just a simple one with a vinigairette dressing flavoured with garlic chips) plus some sultanas and carrot strips. Even a French wilted spinach with bacon lardons to jazz it up…...

Essentially you should enjoy them every time you eat them and there’s nothing wrong with using strong flavourings like parmesan cheese, bacon etc etc if it improves the taste for you.

If you going to eat spinach in the morning try steaming it- then squeezing out any moisture, chop it and throw it in an omellete (you can also funk it up with feta or parmesan cheese).

I have an Aunt with Alzheimers and I’ve been eating heaps more vegetables as well because there’s no way I want that to happen to me either. Also when you learn to like them- you’ll find you can’t live without them.

Hopefully you've had success eating more vegetables...?

Funny enough in other countries, breakfast is just another meal. In the US, we tend to have foods which are designated as “breakfast foods” such as cereal, toast, and even sweeter things like dougnuts. But in other countries, it’s not unusual to have something like a sandwich or salad as part of your breakfast.

I remember in Singapore being able to get

roti (bread) for breakfast.

There were two choices.. With a type of curry sauce or with sugar (if I remember correctly…?).

Of course, I chose the sweeter path!
