THe second full week of veggie life is just peachy…no pun intended! My family is benefitting from a life with less meat too, although the rest of them are still eating meat (just not as much as formerly). I made lentil stew over couscous, baked potatoes with toppings, veggie pizza, potato soup, two nights with tofu entrees, pea soup and lots of homemade wholegrain bread. I think they’re all hanging in there okay. I know I love it!!
