Ingredients:
  • several large yellow onions (prepared the night before)
  • butter
  • several large red potatoes
  • green beans, destring and remove ends
  • extra virgin olive oil
  • sea salt
  • cherry tomatoes, halved
  • capers
  • kalamati olives, pitted
  • head of romaine lettuce (other hearty lettuces can be used)
  • red vine vinegar
  • course ground black pepper

Directions:

  • Slice onions in thick slices and place in a crockpot with butter overnight on low.
  • Boil potatoes until firm but not mushy. Remove to cool and cut in 8ths.
  • Blanche green beans by boiling them for about 6 min., then fill a bowl with ice water and immediately take green beans from boiling water to ice water. Remove, pat dry. Split some of the green beans in half lengthwise.
  • Add potatoes, green beans, carmelized onions, capers, olives, tomatoes. Tear some of the lettuce and toss with the rest of the mixture. Drizzle olive oil over mixture. Sprinkle with sea salt & ground pepper. Add the rest of the lettuce, tearing. Drizzle with vinegar shortly before serving.

Is that what’s it’s called? I’m not even sure how you say that.

I do like traditional caesar salad, but anchovies by themselves do not appeal to me.

Honestly, I’ve never made this salad, but I saw this lady on TV make this salad yesterday and failed to write down the recipe, so I was just writing down what I remembered.

This salad sounds good with some grilled salmon on the side. Yum. I’m thinking about doing this salad for Thanksgiving to share with my family.

I have made nicoise salad,

and I usually make it with tuna and hard-boiled eggs, but leave out the anchovies. (Not necessarily because I don’t like them, but because I forget them, and don’t usually keep them in my pantry.) Also, mine doesn’t have the onions, but that sounds like an interesting addition. We’ll have to both experiment!

I know so many times I see things that look good on cooking shows, but then I can’t remember how to make them.

Because I usually only cook for myself, I don’t bother with new recipes very often any more, unless they are really fast and inexpensive, but I do try new things more often when I’m cooking for other people. I was wondering if your kids are good at trying new things or not?

Kids - New Things

This salad would be a challenge to make unless you plan on eating it for several meals. In that case, I would leave out the lettuce and vinegar until maybe the hour you are going to eat it, as you do not want things soggy and wilted.

Sometimes my kids are good at trying new things. When they were younger, they were less picky. The influence of their friends and each other sometimes makes it a challenge. I have resorted to bribing and threatening, at times.

I keep basic staples in the frig and on hand: nuts, dried fruit, fresh fruit, hard-boiled eggs, cut up veggies, hummus. These are all healthy fats, carbs, and protein.

Sean has been a good influence on Hannalee, who seems to really just like eating carbs. Sean is better with eating more protein & fat, which is probably why he is thinner.

Rarely do I have junk at home, so it’s not an option for them to eat this stuff. I also have them sometimes participating in making things, and they always seem to eat what they help make.

I do have “regular” foods like P&J, mac&cheese, chicken “nuggets”, but they are all the organic, healthy versions. It is a different taste, though. Better, to me, but different.

The salad recipe came from this lady on PBS who was sharing it. She learned it while she was in Sicily and it looked so delicious.

My 4 yr old son loves salad, so I think he will like this, and even my daughter, who normally doesn’t like salad, may like this.

The onions, when carmelized, are supposed to be very sweet. I can’t wait to try this. Both my kids love onions, and anything sweet. Yum.

I have done the carmelized onions twice. My children LOVE them. I modified it, though. Added some sea salt & garlic powder. It brings out the flavors of the onions more.

Did a different version of a different salad:

  • romaine lettuce
  • dried cranberries
  • roasted chicken
  • celery
  • orange/red pepper
  • blue cheese dressing
  • carmelized onions

That salad is very yummy.
