Made some spinach quiche this morning... 23 months ago

to take to a pot-luck lunch. It was a hit, and they ate it all. I had some pre-made pie-crust dough left in the fridge from a while back, and needed to use it up. I’ll have to buy some more to have on hand for future pot-luck meals.

The filling ingredients were...

3/4 c. milk, 3 eggs, 10oz frozen spinach thawed and drained, approximately 8 oz. cheddar and parmesan cheeses grated, a little bacon cooked and crumbled, and I added a little chopped onion to the original recipe and cooked it with the bacon. Mix it all up, throw it in the pie crust, and bake for 35-40 minutes at about 375 degrees.

I think with the milk, eggs, and some cheese, you can throw almost anything else in and call it a quiche.

It was good, and I didn’t even get to have any!
