writing out menu plans really help with eating well – you know what you are going to make & you have everything for that meal in the house as your shopping lists follow the plan.

Looking for recipes to include more whole wheat flour in our diet

Sneaking in whole wheat flour

It’s pretty easy if you do your own baking. It’s not that noticeable if you do half white/half whole wheat. It’s also easier to sneak in if you use white whole wheat as opposed to red. Another trick is to do 3/8 whole wheat, 1/8 wheat germ, half white.

Another option is to use other whole grains. Barley flour is a whole grain, but is pretty indistinguishable from white in terms of flavor. You can grind up oatmeal in the blender to make oat flour. These work for quick breads and the like, but you have to be careful with yeast breads, because often you need the gluten in the wheat for the bread to rise.

Weekend breakfast

Tomorrow’s Saturday – make pancakes!

2 cups milk
2 eggs
1/4 cup oil
2 cups whole wheat flour
1/2 tsp salt
1 tablespoon baking powder

Beat milk with the eggs and oil. Add flour, salt, and baking powder, mix gently. You do not need to have all the lumps worked out.

Pour 1/4 cupfuls of batter on a hot, non-stick griddle. When they start to get dry around the edges, flip.

Serve with real maple syrup (don’t need butter, IMO). Or heat up strawberry jam – it then becomes a fruity strawberry syrup.
