31. Hummus  — 1 month ago

I tried making hummus a few months ago and the end result was inedible. I usually like a lot of garlic, so, as I often do, I used double the amount of garlic in the recipe… big mistake!
Last week, I decided to try again, following the recipe religiously. At first it was a bit bland for my liking, so I kept on adding cayanne pepper… until it was too hot…. I managed to tone it down a bit by adding more lemon juice but it was still a tiny bit too hot for hummus, though it was ok and we ate it all.
Yesterday I made hummus yet again. This time I was more careful with the spices and the end result was much better, best so far. However, it’s still not right, nowhere near as nice as my favourite hummus. (I’m quite picky about hummus; it has to be just so). I can’t really figure out what to do, but now I’m really determined to try again and again until I think it’s the best hummus I ever tasted. I think that’ll take quite a few attempts…
