A few years ago I had this on my list of things I wanted to learn to do, but I didnt know anyone who made them. I know plenty of people who eat them though, and have had my share of good and bad. We have the Tamale Festival here locally even. Anyway, about 2 years ago now I took it upon myself to learn. I made my first batch right before Christmas. It was a several day process. I made homemade sauces, 1 red and 1 green. Cooked and shredded both pork and chicken. I studied by reading my all time favorite Mexican cookbook and reading about 10 different sites on the internet. Made my masa, soaked my husks, got all the ingredients together and then spent almost an entire day making them. They turned out great and I gave some away as presents. My ultimate compliment came from my friend Isidro, who is from Mexico, and he loved them. I made pork with red chili, potato, and black olive. And chicken with salsa verde with jalapenos. I have made them two more times since and served them on Christmas Eve last year to the whole family. Every time I make them now I have to make more because so many people request them. I bought a humongous tamale steaming pot.

I might have to put this on my list so I dont forget come Christmas time. But if you think you would eat them, I will send them! You are in Ca too so if I freeze them and stick them in a styrofoam shipping package and overnight them they would get there just fine. I promise no unidentifiable meats.

I ain’t askeert none. 40% or so of the folks around here are our Hispanic surnamed friends, and I’ve eaten all sorts of their grub from little stands on the corner, to people going door-to-door, to taco wagons and retail outlets.
I’ll start watching for the shipment about December 15th.

Hey Corn Lady!
I get so excited when the woman comes around with the little corn cart. You ever had that mexican corn with the mayo, hot sauce, limon, chile, and parmesan cheese? How about those little grilled hot dogs wrapped in bacon? My favorite. Dang health department made it illegal for them to put the bacon on now.. I dont get that. Anyway, no thanks on the kid. I am trying to pass along two of my own sometimes.
Alright, well, you can't blame me for asking.
We used to have a tamale lady that came around here twice a month or so, illegally peddling her tamales. God, they were great! Especially the cheese ones.
And then I didn’t see her for some time…and when she showed up again I think she said she had some untimely immigration problems and was sent “back” for a while, but, though her English was lousy, she was apparently back in business, because I bought a dozen from her.
That was two years ago and I ain’t seen her since.
