thanksgiving

pumpkin pie was fantastic .. nobody could tell the difference

stuffing was splendid sans giblits

and the ordinarily meat-centered family was thankful for the options :)

(and i was remembered by a near stranger for something i cooked two years ago! walnut stuffed mushrooms .. never again .. they take too many hours to make)

Can you share?

Here is my famous quinoa recipe:

1 cup quinoa cooked in veg broth
1 can black beans rinsed
1/2 cup diced red onion
3 cloves garlic crushed
2 hot peppers diced (your choice)
3/4 cup cooked corn kernels (I like frozen)
1 can petit diced tomatoes or 2 cups fresh diced
1 cup diced red or green pepper
1/3 cup olive oil
juice of one small lime
1/2 tsp ground cumin
1/2 tsp paprika
1 tsp chili powder
1/2 cup fresh chopped cilantro
1 tsp ceyenne pepper (or to taste)
black pepper to taste
salt to taste

Mix everything together and let rest in the fridge for at least 2 hours, but best overnight. Serve any temp with garnish of fresh cilantro and avacado. Yum!

i borrowed the recipe for pumpkin pie from here: http://vegweb.com/recipes/sweets/1202.shtml

however, i added nutmeg and about 3 tbs of cornstarch to make sure it was a good texture instead of mooshy (if you read through the comments, you’ll find recommendations for both)

also, whenever a recipe calls for sugar i use maple syrup (3/4 cup for each cup of sugar, and subtract about 3 tbs of water/liquid from the recipe where you can)
