Have you been following the folks who are writing and editing collaboratively online? There are several now but J.D. Lasica was the first I heard about, Robert Scoble is doing one now too.

I think a great tool for this would be instiki because it is an elegant simple wiki with some powerful output abilities – so the wiki can get output as a PDF or later prepared for print.
