Having read The Diet Delusion (Good Calories, Bad Calories in the USA) by Gary Taubes, this is all the motivation I need to stick to this goal. What an amazing, life changing book (though very dense with scientific research). I make low carb puddings (muffins made with egg white and cheesecake with ground almond base) at the weekends and lunch at home on workdays so don’t find it too much of a sacrifice to eat this way. It feels much better to be eating like this, I haven’t had a cold in over 6 months, though my workmates were laid low a couple of times in that period. I can see this being a long term way of living.
