4. Pumpkin butter

Something you’ll learn very quickly about me if we spend time together around this time of year is that I’m a little obsessed with pumpkin butter. I dream about it all year, and then when autumn finally comes, I stock up like a mad woman. So good! This year, I’m going to try to make my own.

AND, I’ve found a recipe for “autumn quesadillas” that involve pumpkin butter, and let me just say… I’m excited.

Haven’t found pumpkin butter yet, but I’m hoping my local farmer’s markets stock it SOON!

How do you make it?

Can’t wait to see how it tastes… You can use fresh pumpkin, but here’s the recipe I found that I think I’ll try:

INGREDIENTS
1 (29 ounce) can pumpkin puree
3/4 cup apple juice
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1 1/2 cups white sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg

DIRECTIONS
Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently.

Transfer to sterile containers and chill in the refrigerator until serving.

Yes! You can actually add it to the batter too and make pumpkin pancakes!

and vegan too… As for pumpkin puree I have never come across it before, I hope I can find some… :)

If your stores are anything like the ones here, then they usually put pumpkin puree in the baking aisle! People only think to make pumpkin pie with it, but there are oh-so many things to do!

I haven’t had pumpkin butter but we eat apple butter (the Amish in Pennsylvania and the stores make it). You ever hear of banana butter? I guess you can make all sorts of fruit butters!

We have lots of apple butter here too! I like it, but it doesn’t have the same kind of balance that makes me love pumpkin.

I’ve never heard of banana butter at all… wow! That I would love to try. I bet you could make it, huh?
