10/25 - this week's dish is chicken gumbo
I have some homemade chicken stock, and some frozen gumbo vegetables (corn, okra, etc.); plenty of canned tomatos and some file powder. I don’t have any more plain white rice, but the gumbo itself should be fine without it.
I’d like to make some biscuits to go with it, but I haven’t any buttermilk nor butter to go on the biscuits if I made them.
Chicken gumbo isn’t my favorite, but it is nutritious, filling and something I can make with what I have on hand – so that’s what’s gonna be the dish for the week.
