And so easy, I wish I’d tried this before. We scooped our pumpkins, plopping the guts into one bowl and the seeds in another, rinsed the seeds in a sieve, boiled them for 10 minutes in salted water, then toasted them on an olive oiled pan for about 25 minutes at 400f. Yum!

Definitely something to be added to the annual Halloween festivities.

roasted pumpkin seeds!

I usually skip the boiling part and just roast them in the oven- they come out fine that way. If you have enough seeds, try experimenting with some different seasonings. Smoked salt (if you can’t find that, you can just use salt and some liquid smoke- the liquid will evaporate) is my favorite, but I’ve enjoyed chili seasonings, a cajon seasoning, and even a greek seasoning mix that I have. Most of the seasoning mixes have enough salt in them that you don’t need to add any extra.

We carved pumpkins at my son’s house this year, so I didn’t get any seeds- I’ll have to beg for some of the finished product ;)

I'll definitely try adding something next time

We were discombobulated arranging costumage and trying to get out the door in time for candy, so I left them plain, which I love… but I’d like to try spicing them up next time. Thanks for the spicy suggestions!

Memories

We used to make toasted Pumpkins seeds when I was a kid. I remember it was (almost) as much fun as the carving!
