It would be
very easy to just put 10 cheeses I have all ready tryed but what fun would that be? I will only have one entry as I will continue to edit this one.

Some (sorta) obscure but nice cheeses
are queso fresco, queso blanco and pecorino.
(a little piece of pecorino with honey and pepper is great…sounds weird, but it’s good).

If you have a Trader Joe’s nearby they have a 13 month Aged English coastal cheddar that is awesome. It even features a nice amount of lactic acid cystals. Best of all it has no annato colourant and is fairly inexpensive.
It really is a lovely cheese I suggest it to anyone and everyone who likes an extremely sharp cheddar.
