Cottage cheese & oil + one green onion

Blended with my immersion blender (adding a cup or so of water & celtic salt) is absolute heaven!!!

The onion tastes soooooooooo good. It looks like a creamy milk, slightly green. Wow. This is my new favorite way to prepare one of Budwig’s classic mixtures.

6tblsp low fat organic cottage cheese
3tblsp Barleans flax oil
green onion
water

Nutritional Benefits of Green Onions

Green onions offer many of the same health benefits as mature onions, and regular consumption of onions has been shown to:

  • Lower blood sugar
  • Decrease high cholesterol and blood pressure levels
  • Reduce the risk of developing colon and other cancers
  • Reduce inflammation

The compounds responsible for the strong odor of green onions are also what provide some of the biggest health benefits green onions offer. Onions contain allyl propyl disulphide, which has been shown to lower blood sugar levels. Quercetin, an antioxidant found in green onions, offers anti-inflammatory and anti-histamine benefits. Onions are rich in chromium, an essential mineral used by the body to regulate glucose and for the metabolism and storage of macronutrients. Green onions are rich in vitamin C which not only boosts immunity, but offers protection from cardiovascular disease, eye disease, and skin wrinkling. Other nutrients found in green onions include fiber, manganese, vitamin B6, potassium, and copper.
