One thing that has really helped me cook more is making a plan for a weekly menu in advance. I like to include at least one meal from scratch, if not more, and at least one quick heat and eat kind of meal. This way I can plan which day I will have the time to make something more complicated, and something quick as a back up plan, should it not work out.
This week I made chicken cattiatore and it came out pretty good. It was a huge recipe, and we will be eating the leftovers for a few days :)
