So I’m finding I quite simply don’t have the time and energy to consistantly bake/cook big impressive meals. And, let’s face it, living on my own, I don’t necessarily need anything more than some nutritious caleries to fill my little belly… so, here it the quick and dirty ideas list for weeks when i need to feed myself well on a conscious budget for both time and money:
- Yam wedges
- Temphe
- Toby’s Tofu Spread
- Peanut butter and egg sandwhich
- Black bean dip and corn chips
- Fruit smoothy
- Carrots and humus
- Veggie and egg scramble
- Green salad with nuts and dried fruit
- Red lentil soup
- Baked potato with brocoli and a veggie burger
- Quinoa pasta with doctored sauce full of veggies
- Carrot nut loaf
What ever is left over or previously stashed away in the freezer…
