eat more rice
rice for breakfast

Rice is quickly becoming one of my favorite things in the world. I’ve always enjoyed it for dinner, but increasingly eat it for lunch in the form of a stir-fry-ish dish. Earlier this year my mind was blown with a taste of rice pudding, and today I had my first rice dish for breakfast:

1 bowl leftover rice (brown, short-grain)
1 cup lite coconut milk
1 handful raisins

Let this sit for a while, then heat it up. This could easily become a staple in my diet, chasing out oatmeal for a place in my stomach.

Anyway, I feel healthy when I eat rice… wholesome. I’d like to do more of that.

cookbook suggestion

You might want to check out Seductions of Rice: A Cookbook by Jeffrey Alford. It’s an acclaimed international cookbook devoted exclusively to rice dishes.

Pricey though, so check your library first.

Rice is good carbs

Plenty of non-European cultures eat rice for breakfast. Some experts are saying one should eat more carbs/starchy food (like rice or oatmeal) in the mornings, and then less and less throughout the day with dinner being the skimpiest meal.

Eating rice (and you don’t have to pulverize it into a goo, yuk) will fill you up in the mornings, too, so you’re not so inclined to snack before lunch.

If I’m in a rush, I’ll cook up one of those Lipton Side Dish rices, like the broccoli cheddar, if not I’ll cook fresh in the rice cooker the night before. Sautee some mushrooms and stir in the rice when done. Very satisfying with the morning coffee or tea!
