Currently have about four beef ribs, a beef shank, and a bottom steak in there at 134. I’m not entirely sure how much I trust the controller and keep screwing with it. I suppose my problem stemmed from setting it to 132 and then seeing it fluctuate between 130 and 129 and anything below 130 can cause some pretty nasty food poisoning. So I cranked it up to 150 and set the crock pot to high and it jumped up to 136 eventually ending at 137.
After lowering the controller down to 134 and briefly taking the top off, its decreased to 136 and appears to be holding. I figure that if the controller was set to 132 and it was -2 and -3 below the setpoint, 134 should hopefully bottom out at 131. In theory if I had an immersion circulator this wouldn’t be as much of an issue. Kinda makes me wonder if I got a turtle in-water aquarium pump if that could work . . . oh well, here’s to hoping I don’t wake up with 129 on the thermometer.
