#25 Zucchini Muffins

Still trying to use up all that zucchini!

1/3 cup applesauce
2 eggs
2/3 cup sugar
1/2 cup brown sugar
1 tsp. vanilla
2 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 cup shredded zucchini
1/2 cup shredded carrot

Preheat to 350 degrees
Mix eggs, sugar, applesauce and vanilla.
Combined dry ingredients and then add to egg mixture.
Fold in zucchini and carrots.

Distribute batter into a 12 count muffin tin and bake for about 20 minutes.
