I just made these Cheese straws/twists. This is a little ‘cheats’ method as I used the ready made and rolled out pastry sheet, but as I’m all in favour of quick cooking with minimal effort… it works!
Bacon and mature cheddar straws
Ingredients
•1×320g puff pastry – Jus-Rol puff sheet – green packet
•1 tbsp English mustard 0r Wholegrain mustard
•100g mature cheddar, grated
•freshly ground black pepper
•10 slices good-quality streaky bacon (thin rashers)
•1 free-range egg, lightly beaten
Preparation method
1.Line a baking tray with greaseproof paper.
2.Unroll the puff pastry leaving it on the blue undersheet.
3.Spread over the mustard, sprinkle with the cheese (press in slightly) and season with freshly ground black pepper. Place the pieces of bacon onto the pastry, leaving a small gap between each piece.
4.Cut the pastry between each slice of bacon. Carefully twist each piece of pastry 4-5 times so it looks like a curly straw. Then place on the greaseproof paper. (Ideally on the baking tray, but if it won’t fit in the fridge then use a wooden board.)
5.Repeat the process until all of the bacon has been used up. Chill the pastry twists in the fridge for 15-20 minutes.
6.Preheat the oven to 220C/425F/Gas 7.
7.Remove the twists from the fridge. Place on baking tray and brush with the beaten egg.
8.Reduce the oven to 200C/400F/Gas 6 and bake the twists for 20-25 minutes, or until the pastry is well risen and golden-brown. Remove from the oven and set aside to cool.
Oh yum and so unhealthy!
