I’ve been wanting to do this since college but never have. I lived in Europe for 3-years and did travel a fair amount while there but never did the full-on back packing, Euro-rail extravaganza. Even now, at 40-yrs old, this sounds like tons of fun!

Heck Ya! It's FUN!
Grab your passport, your backpack (travel light), and a rail pass and get going. You are never too old to do this. Be flexible about where you want to go because you will meet people along the way who will tell you about wonderful places to visit. Travelling is always a great experience and no one is going to care about your age. There are plenty of Europeans travelling the same way.
