How to expand my repertoire of homemade fast, delicious, and balanced vegetarian meal and snack options
How I did it: I set this as a slow, longer-term goal and tackled it one new recipe at a time. I didn't even try something new every week - it was more like every 2-3 weeks. I'd Google for something new that was both healthy and intriguing. I just stopped trying to get myself to cook recipes that I knew I _should_ be eating, but simply didn't enthuse me.
