How to make elderflower champagne
How I did it: I got some plastic screw top bottle and sterilised them using baby bottle sterilising solution.
I got a bucket, sterilised it... I fill the bucket with water, threw in four elderflower heads, the peeled rind of four lemons, the juice of the lemons, four tbs of whitewine vinegar and a kilo bag of sugar. I stirred it and left it for 24 hours.
I strained the fluid into the bottles, sealed them, and left them for a month or so.
The drink is great - a bit alcoholic but just pleasantly so, a bit sweet but fine if its cold.
Lessons & tips: Be careful how you open the bottles - they can explore. Loosen the cap a bit occasionally so the bottles don't explore whilst they are being stored.
Serve it very cold.
It was so easy - just do this when elder is in flower.
