How I did it: We followed the directions from an online recipe. You have to be diligent about following the recipe to the letter. Don't follow the instructions on the gelatine packet like we did on accident, use the marshmallow recipe.
Don't lose hope when you're on the last mixing stage. It takes what seems like forever to mix the goo into what resembles marshmallow fluff, and doesn't really seem like it's working until the last 4-5 minutes of whipping at high speed.
This was super fun, but really messy. With all the fancy ingredients (and we opted for good quality organic stuff) I think these were $15 marshmallows. We used some for s'mores, and they roast really differently than those Jet-puff things, but are really tasty. We added vanilla extract to ours and covered them in a mix of starch and vanilla sugar.
Lessons & tips: The recipes all said we needed a stand type mixer (giant fancy expensive Kitchen-Aid thing) but we just used a hand mixer and it went fine.
Have a friend standing by to switch off with you every couple of minutes, because holding the jiggling mixer while it tears through really thick goop gets tiring fast!

Approach this project on a day when you have patience, energy for messy cleanup, and a friend to help. They will need to cool overnight, so plan to meet up the following day to make smores and hot chocolate to try them out. ;-)
