I almost always order enchiladas or chile relleno because I cannot make them the way i like them. lol….. The first time I had chicken enchiladas with chile relleno. It was perfect, but what peaked my interest in the menu were was non traditional dish of spinach enchiladas. I had that dish every time after that. It had the creamiest cheese sauce. And I agree mex cheeses are the greatest. I tell my family I prefer mex cheese because Ive never seen the yellow/orange milk to make the cheeses here. Colored cheeses there are from chiles. got to love simple goodness.
