How to make a souffle by Spyrunner

"I baked a souffle with a bit of help from my wife."

How I did it: I've been promising my wife that I would make her a souffle someday.  I finally said that I would make one while my daughter is away (she's allergic to cheese and my wife wanted a cheese souffle). 
We had all the ingredient in the house except the Gruyère cheese. 
I was disappointed that the souffle didn't rise above the pot, but then I realized that the recipe was for a six cup souffle and my container holds 10 cups.

Lessons & tips: I don't think I would have been able to make this without my wife's help.  I tried to beat the egg whites on low (you need high speed), I didn't know what stiff peaks were, and  I've only once or twice made a white sauce. 
A Kitchen Aid was helpful for beating the eggs.
Souffle tastes like a fluffy omelet.  I thought it would be more like popovers, but there is much less flour in a souffle.
