How to find veggies that I actually enjoy eating
How I did it: My stepsister turned me on to snap/sugar peas and I love them! I actually take them to work and snack on them. I also found a couple minimally-processed frozen veggie blends I like... there is one called "Healthy Weight", I think from Green Giant, that has edamame, carrots, black beans and sugar peas. I am still looking for more and working on being more open to trying new veggies... but I feel I've achieved a measure of success!
Lessons & tips: Keep trying different things. Remember, the way your mother used to cook it is almost surely not the only way to do it! A lot of veggies are straight nasty when ruthlessly boiled into submission, but quite tasty raw or steamed. So don't let bad childhood memories of being force-fed grossness keep you from giving those veggies another chance. There are some great recipe sites out there, too, so don't be afraid to pick up some unfamiliar veggies at the grocery store.
