How to make pancakes
How I did it: Lots of trial and error with raising/lowering the heat level, and throwing out the first pancakes in each batch. I even tried a different pan, thinking that my old nonstick was causing the pancakes to burn easily, but the pan didn't make any difference.
Lessons & tips: The pan is hot enough when water sizzles and steams when you flick a drop on the surface. I have found that using an ungreased pan works best for making pancakes that are evenly browned.
