How to find the world's best cupcake recipe.
How I did it: Orion made these with his friend Nathan, supervised by me and Nathan's mummy Jenny (my best friend). We made them for Yule/Winter Solstice and they were yummy beyond scrummy. :D
Ingredients
Cakes
175g butter
175g soft brown sugar
175g golden syrup
200ml milk
2 eggs, whisked
325g self-raising flour
2 tsp ground ginger
1½ tsp bicarbonate of soda
Icing
2 cups icing sugar
3 oz butter/margarine
4 teaspoons lemon juice
Instructions
1. Preheat the oven to 150°C (gas mark 2).
2. Grease your loaf tin and lay out 12 bun cases in a suitable baking tray.

Melt butter, sugar and syrup in a pan on a low heat, mix so that the
sugar has melted into the butter and syrup. Remove from the heat, add
the milk and blend until smooth.
4. Add the eggs and mix in. Fold in the flour, ginger and bicarbonate of soda.
5. Fill the loaf tin half to three-quarters full. Fill the bun cases in a similar fashion. Don't overfill them!

Put them all in the oven, with the buns at the bottom. The buns will
take approximately half an hour to cook. Put the buns on a cooling rack
once they're done. Leave the loaf for approximately one more hour. Keep
an eye on it. Put a knife into it. If it comes out clean, the cake is
ready.
7. Soften up the butter or margarine. Sift in the icing sugar
slowly, blending it in. Add the lemon juice until you have the desired
texture.
8. Put into an icing tube and ice in swirls onto the cupcakes. Sprinkle on hundreds and thousands.
9. Try not to eat them all at once. ![]()
