How to eat more vegetables
How I did it: I started out eating delicious, fatty, creamy mashed potatoes in the same bite as half or a fourth of green bean. I slowly increased the ratio of potatoes to green beans until I could eat (and enjoy!) the green beans on their own. I did similar incorporations for other vegetables - spinach, peas (good with mac and cheese), mushrooms, bell pepper, zucchini, squash, etc. Finally, I am at a point where I can try new vegetables with excitement rather than dread or disgust. It still takes me a couple of tries typically to get used to new flavors and textures, but I am willing and happy to try things multiple times. And I am starting to know what I like in vegetables. But at the end of the day, hiding vegetables in my meals works really well for me.
Lessons & tips: For me, learning about nutrition, the why and how vegetables are good for me was really key in motivating me to eat more vegetables and learn to really enjoy them.
