How to eat beignets in New Orleans

How I did it: Went back to Cafe Beignet - a staple of my early days in New Orleans and ordered a few beignets with hot chocolate (not coffee- hot cocoa is the more traditional and suited accompaniment in my opinion as a true blue cajun) ;)
Lessons & tips: These can't be made at home like they make them at Cafe Beignet. I don't know why, and I've tried a million times, but they're not the same outside of New Orleans.
