How I did it: I had heard a friend saying that she had something served with Raspberry Confit, it sounded nice although I didn't have a clue what it was. 
I found this great recipe for cheesecake which was served with raspberry confit.  It was out of this world.

Lessons & tips: Just need time to get round to buying the ingredients and cooking it.  It doesn't take too long and would be great for something to make with kids as good fun hitting the biscuits in the bag!
