How I did it: Took an organised tour to do this, spent 4 weeks with them touring the whole country. Then went back alone for Beijing and Hong Kong or an extra 2 weeks.
Lessons & tips: Hong Kong is easy to travel around, get an underground pass to save money. HK needs no visa from the UK, but the mainland does.
Try to send extra time in Beijing as there is a lot to see there and the forbidden city (say) deserve a day at least.
Organised tours will insist on dragging you to factories and try to get you to buy their stuff. You don't have to if you don't want to, just use it as a tea and bathroom break.
