How to eat more vegetables
How I did it: I decided, after much thought and soul searching, that I was officially ready to begin adjusting to life as a vegetarian. I stopped eating fried foods, chicken and red meat. Then I stopped eating lamb, pork and other poultries. With the exception of seafood, which I refuse to stop eating, I have stopped eating meat altogether.
I have been a pseudo-vegetarian most of my life, but I have been mostly a fruit and grains person. I started eating things like salads and vegetables with every meal and cutting back on foods high in salt and fats.
Lessons & tips: Start slow, eating salads with dinner, getting vegetables as side dishes instead of breads and starches.
