How to learn to cook more dishes

"I decided I was going to learn how to cook.... now I am looking into culinary school."
How I did it: Basically, a boy told me he wouldn't marry me if I didn't know how to cook.
2 years and a new boyfriend later, I am looking into culinary school. :)
It is one of the best things I've ever done. I've gained a bit of weight (ha!) but nothing makes me happier than making good food... or food, period. (mistakes happen!)
I started with simple recipes and read up on some things, and now I am pretty confident that I can follow just about any recipe. Some of the things in my Julia Childs cookbook is a tad overwhelming, but I'll get there.
Just stick with it!
I am wanting to start working on creating my own recipes, but I think I need a bit of schooling first... or A LOT of trial and error. :)
Lessons & tips: do it do it do it do it do it!
Don't be afraid to make mistakes. You can always start over... the worst thing about it is having to run back to the grocery store to buy more ingredients.
