My best recipe is one for an easy cake. I’ve found it in Metro AM journal and it’s very straightfoward.

Chocolate chip and orange loaf

Ingredients:

225 g Self raising flour
110 g Caster sugar
Rind of 1 orange
150 ml orange juice
2 eggs
3 tbsp sunflower oil
110 g chocolate chips
How to make it:

1.- Pre-heat the oven to 180ºC. Grease and base line a 900 g tin.
2.- Sieve the flour and caster sugar into a mixing bowl. Stir in the orange rind.
3.- In a separate bowl, beat together the orange juice, eggs and sunflower oil (I used olive oil instead and it was gorgeous). When the mix is blended, add to the dry ingredients and gently stir until everything is combined. Finally, stir in the chocolate chips.
4.- Transfer to the prepared tin and bake for about 45 minutes or until a skewer or knife comes out clean.
5.- Leave to cool a little in the tin for about 10 minutes, then turn out onto a wire tray and leave until completely cold.
