Have you tried going to Golders Green? From what I understand, that’s the main Orthodox Jewish area, my uncle and his Orthodox Jewish wife live there. I’m sure you could find a good bagel. Kudos on making your own though, I’m very impressed.

I have been there
...and I loved the neighborhood, and the bakeries, and the grocery stores, and an Israeli cafĂ© where we had a really nice snack. (One of the bakeries was looking for a worker, and I was actually tempted!) I tried bagels from a couple of bakeries there, and while they were fine, they were just different from what I was used to – more like regular bread. New Yorkers swear that there’s something unique about their tap water that makes their bagels special, which is probably a stretch… I’m sure there’s some food science to be worked out here; I’m not sure my little kitchen is up to the job of doing that, but maybe I can come up with a small-scale solution!

Maybe you need to pass it through seven people before you make bagels out of it or something! ;-) That makes a lot of sense, though, apparently you can’t make Guinness anywhere in the world apart from Dublin because the water is all wrong – it really affects the taste.
