How I did it: I can't actually help anyone with this, because it's a pretty personal thing. Tastes differ for each person and there are so many different recipes and variations. But unless you are planning to eat that puppy as soon as it's cool enough to cut (the entire thing) it's not worth it. I haven't figured out yet how to make a bread that lasts more than a day. More than a few hours is even questionable.
Gluten-free baking is costly and not overly time effective, so you've got to make sure it's going to be worth it.
But I made a good one, even if it was only for one sandwich...
