How to make vegan lemon bars for my mom

How I did it: Followed a recipe from VCIYCJ (see below.) I thought it would be harder to make lemon bars vegan, but it wasn't all that difficult. The crust layer turned out great, and the gelatinous part was pretty good. I wonder about adding a crumbly layer to the top. I did sprinkle it with powdered sugar, but it gets absorbed on pieces that aren't severed right away.
Lessons & tips: I should have had bigger lemons, or more of them, as I was short on lemon juice. Fortunately with the zest it was lemony enough, but next time I'll buy 4 supermarket sized lemons (unless I can find two particularly gigantic ones.)
