I’m fasting for Easter, which by our calendar means nothing that comes from an animal for over a month. I’ve come up with a while bunch of new recipes, though I really do miss meat and dairy! Thankfully this isn’t perminant!

I’m having a fruit and veggie problem. I buy them, and the fruit gets eaten instead of meals the first couple days after I go shopping.
The veggies, on the other hand, sit in the fridge and I don’t get around to them until a number of days have passed, and then they’re going bad. This system is definitely going to need some work.
I keep eating these “almost” fruits and veggies. The other day I have an avocado salad for dinner, except avocados are really high in fat, and not particularly nutrient rich. I expected to eat more leafy greens and crunchy veggies. Instead I had a salad for dinner, with iceberg lettuce (no vits and mins), cucumber and tomatoes. It was also drowning in dressing (made at the salad station, not my doing – promise)
Since it’s been so hot I haven’t really been cooking, so there haven’t been any roasted veggie suppers, or anything like that. I need to figure out another way to get fruits and vegetables into my diet!
