Today I’m going to incorporate some veggies into a beef, rice meal for dinner. Also I am going to have veggie soup over barley for lunch. I (of course) have no problem fitting sufficient fruit into my diet. It’s the veggies.

Here’s some tips I’d like to share:

For breakfast I sautee some frozen diced green pepers & onions in spray canola oil, then I add egg & then I put fat free sour cream, salsa & shredded cheese. So I’m getting the peppers, onions & salsa as veggies

When you eat chilli make it into a salad w/salsa, lettuce, cheese & sour cream.

Turkey sandwiches I add onion, lettuce & tomato.

Also good is veggie or lentil soup served on top of barley.

For now I am just trying to add veggies to food I’m already eating rather than eating them solo.
