Now that I’m up to 2 a day (the minimum recommended) I plan to keep increasing my veggies. The healthiest period of my life was when i was eating a lot of whole grains and fresh veggies, little meat, and almost no sugar or caffeine. I want to work my way back to that diet.

This is pretty well habit already. The only days I have not eaten at least two servings of veg have been the days when I haven’t eaten much at all. In order to make sure even those days are covered, I am going to stock some V8 juice. Then even when I have little or no appetite, either because of illness or stress, I can drink my veggies. :)

Friday:
- 1/2 potato, with onions (I usually don’t count potatoes as a vegetable, which is why I threw in the onion!)
- one can sliced carrots, marinaded in dressing of russian mustard, balsam vinegar, and olive oil
Saturday:
- 1/2 potato
- steamed broccoli
Sunday:
- cream of broccoli soup
- mixed broccoli, cauliflower, and carrots in cheese sauce
Monday:
- 1/2 avocado
- roasted brussel sprouts, carrots, onions & garlic (roasted enough for Monday dinner & snack Tuesday)

My target is to eat two vegetables a day.
Plan: Roast three days worth of veggies, store, so that when I want a snack, I can snack on gourmet roasted veggies instead of on candy.
