NO FLOUR!
1 cup peanut butter
1/2 cup white granulated sugar
1 tblsp of vanilla extract
1 large egg or 1/4 cup egg substite
1 cup chocolate chips (or whatever makes you happy)
2 ungreased cookie sheets.
Preheat oven to 350 degree F, stir all ingredients in a large mixing bowl. With two spoons (one to scrape the other), spoon out the cookie “dough” onto one cookie sheet 1-2 inches apart b/c they will spread a little.
Place cookies in middle of the rack and watch for them to rise a little and turn golden brown on the edges. About 5-8 minutes depending on your oven or how big you make the cookies. During this times, prepare the other cookie sheet with cookies.
When the cookies are done in the oven, take them out and let them cool on the sheet because they will be the consistancy of fudge. Place the other cookie sheet with prepared cookies ready to bake.
When they do cool, take them off the cookie sheet using a metal spatula.
Repeat as often and as long as there is cookie dough in the bowl.
Note: This recipe is not limited to just creamy peanut butter. It can be really good with Cashew, Almond, or even Crunchy peanut butter.
