A quick & easy two-egg omelette (non-fat cooking spray on the pan, eggs beaten into skim milk, cheddar cheese melted into its folds, a little salt & black pepper for seasoning) satisfied my protein craving. yum

The other day I found five-pound sacks of cut & cleaned cauliflower & broccoli florets on sale at the store (perhaps prepared in such large quantities for the Thanksgiving weekend?), so I got a bag of each. Tonight I steamed up the first batch—so fresh & good, with just a little bit of “butter” & salt!

Somehow, I’d never gotten around to learning how to roast veggies using an oven broiler, so I found some recipes that looked relatively easy & tried two different vegetables, with mixed results:

  • sweet red peppers, with a light coating of olive oil, turned out beautifully—even peeling their skins off wasn’t as difficult as I’d thought it might be: they’re beautiful & very tasty!
  • fresh asparagus, with a light coating of olive oil, turned out inconsistently: some stalks were overdone while others were not done at all, & nearly all the tips were too dry (crumbly, even). I’ll need to figure out what to do differently before I roast any more. While these are still good for an ingredient in cooking (I’m considering asparagus soup), the texture is wrong for eating as a side dish “as is.”
