Well, I made a pie last night. It wasn’t entirely organic but that was my intention. The only organic item was sugar and instead of regular evaporated milk, I used fat-free…
And when the pie came out it was…ehh, ok. Defintely not the typical Southern Sweet tatah pie I’m used to, but nice.
I think the consistency of the evaporated milk had a lot to do with it, so I gotta find a good substitute for that. Not for organic reasons but cause a sista is lactose intolerant and uhhh….nuff said! And I used almond extract instead of vanilla (by default though….they didn’t have vanilla at the store). Didn’t enjoy that change too much.
But I’m satisfied nonetheless. It’s my first pie ever!
Next time I bake it…I’m going to write down my items and steps and create my own recipe, with all organic and fat-free products!

Okay, someone said Sweet Potato pie and pumpkin pie tastes the same. OKAY—-no, they taste differently and I really can’t stand pumpkin pie. It’s not bad but ugghhh, it’s not a good alternative. Of course it was a White girl that told me that and as much as much as I love my girl, I was like “Giiiiirl, you just don’t understand.”
LOL….we laughed it off but I knew she really didn’t get it.
::1 pound sweet potatoes (organic of course….diff. consistency than the regular ones, but good nonetheless)
::3 large eggs (versus what? Medium eggs? LOL!)
::1 cup dark brown sugar, packed (organic)
::1 teaspoon pure vanilla extract (organic…if they have it…I’m going to season this to taste. I usually use this AND lemon extract)
::1/2 teaspoon ground cinnamon (siiiike, I’m usin’ more than that!)
-::1/4 teaspoon salt-
::1 cup evaporated milk (perhaps almond or rice milk? But they aren’t as THICK as evaporated, so we’ll see)
::10-inch regular or 9-inch deep-dish pastry shell, unbaked (okay, this doesn’t have to be organic. It ain’t THAT serious. LOL!)

I absolutely love sweet potato pie. I love some Southern soul food. Don’t eat it that much, but when I do….forget the greens and cornbread—-I want some pie! And I hate waitin’ all year for someone to make it and then only gettin’ a piece or two. I know how to make a mean souflee….real good. And I’ve even mastered making it organic. It’s bangin’. I’m first going to make a sweet potato pie, and then one organic.
